Today I decided to do something I had never done before today. I made fried eggplant for dinner.
It turned out pretty good, except I was absolutely shocked at how much olive oil eggplant soaked up. Even having been warned and even salting it for an hour before hand, it still, soaked up an obscene amount of oil. You would think that this would make the eggplant greasy. Nope. The smaller pieces were a little off, but I think that's because I didn't cook them long enough because I was alarmed at the fact that the pan started smoking a bit because all the oil was being soaked up. This after I put more oil in three times.
Saved several slices to have tomorrow night. I imagine cold fried egg plant won't taste as good as warm fried eggplant, but oh well. I'll just throw it on some bread with some sliced turkey and use it as an addition to the sandwich.

miome is moving up two weekends from now? I thought she was coming up on the first of August, but turns out she's moving before that. *does the happy dance* I've got to do some cleaning. Since I have no furniture, I've just been putting everything on the floor. ^^;
