Lemon sugar cookies

despite what the recipe says, these sugar cookies were not soft after an hour or two. They weren't as crispy as some cookies I've had though, so I guess that counts.. They were also some of the best lemon cookies I'd had. The only change I made in the recipe was to halve in (I did not need 3.5 dozen cookies), and to add a few drops of lemon extract to the sugar I rolled the dough in before baking.

Mmm! I was already to whip out the apron, but then I saw the 'make ahead' part and I don't want cookies tomorrow. ^_^ Also, I don't have a lemon. Eh, I'm sure my new peppermint hot cocoa mix will be just as satisfying as cookies (shush, I'm trying to convince myself).

A few years ago there was a new lemon sandwich cookie from the Girl Scouts that was so light and fluffy and melt-in-your-mouth yummy it seemed impossible that it was from a box. It was too good to be true, though, because they never had them again. Replaced by the standard shortbread cookie with lemon coating on the bottom. Blech.

The closer we get to the dead of winter, the more I am craving more summery flavors like lemon. =q I will note your changes for future reference.
