For the last two days, I have been cooking.
Yesterday, I finally got around to making homemade raisins. Grapes were on sale last week at the store, so I bought a large bag of red grapes. These are now in the dehydrator becoming raisins. The difference between store bought raisins and homemade is the difference between night and day. miome has said she might use them in to make raisin bread. Mmmm...
I also made a large thing of vegetable stock yesterday. I have two large bags full of vegetable scraps in the freezer. I think this batch had celery, onions, potato skins, apple peels, chard stems, and maybe some chard leaves in it. Added some spices, boiled it, and then let it simmer for an hour. Then I freeze the stock in 1, 2, and 3 cup bags until I need it in a recipe. This is because finding cans of vegetable stock that aren't 50% salt is next to impossible. If you can find vegetable stock at all.
Finally, this morning I got up and prepared pot roast. I browned the pot roast I got on sale and then chopped onions, carrots, celery and potatoes. All of that went into the crockpot along with vegetable stock and some beef stock. It's cooking right now. After another 6 hours, it will be dinner (and delicious).
I can be productive when I want to be.
